How do I list two email addresses, for both my wife and I. I sometimes don't have email access.

Listing Two Email Addresses
Our system is set up to use one, single email address to identify member accounts. There is no way to list two or more email accounts for a single account.
That said, it is possible - depending on your email provider - to set up one email account to automatically forward a copy of incoming email to a second account. I am not familiar with optonline.net and so you will have to investigate this line for yourself.
